Ingredients
  

  • ½ cup red onion finely chopped
  • ½ cup freshly squeezed lime juice about 4 to 6 limes
  • 8 cups watermelon cut into 1-inch cubes (approximately one-quarter of a medium watermelon), seeds removed
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves thinly sliced
  • ½ cup fresh parsley chopped

Instructions
 

  • Prepare Lime-Infused Onions: Place the chopped red onions in a small bowl and pour the fresh lime juice over them. Let the onions soak in the lime juice for 10 to 15 minutes. This step mellows their sharpness while infusing the salad with a bright citrus flavor.
  • Cube the Watermelon: While the onions are soaking, cut your watermelon into uniform 1-inch cubes. Be sure to remove any seeds to avoid bitterness and ensure every bite is smooth and sweet.
  • Combine Salad Ingredients: In a large mixing bowl, gently toss together the watermelon cubes, lime-soaked onions (including the juice), crumbled feta, sliced mint, and chopped parsley. Mix carefully to preserve the watermelon’s juicy texture without mashing it.
  • Serve Fresh and Chill: Serve the salad immediately to enjoy its crisp and fresh flavors. If necessary, refrigerate briefly but avoid storing overnight, as the watermelon tends to release excess moisture and become soggy.
