  • 3 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1 tbsp fresh chives chopped
  • Kosher salt to taste
  • Freshly ground black pepper to taste

  • Preheat Oven and Prepare Baking Sheet: Begin by setting your oven to 425°F (220°C).
    This high temperature ensures the potatoes develop a beautiful golden crust while staying tender inside.
    While the oven heats, take a rimmed baking sheet and lightly coat it with nonstick cooking spray or a thin layer of oil.
    The rim will prevent the potatoes from sliding off and helps catch any honey mustard glaze that drips during roasting.
  • Wash and Dry Potatoes: Carefully rinse 1 1/2 pounds of baby or fingerling potatoes under cold running water to remove any dirt or debris.
    Pat them completely dry with a clean kitchen towel or paper towels.
    Removing moisture ensures the potatoes roast instead of steam, giving them a crispier texture on the outside.
  • Make Honey Mustard Glaze: In a large mixing bowl, combine 3 tablespoons of olive oil, 2 tablespoons of honey, and 3 tablespoons of Dijon mustard.
    Whisk these together until fully emulsified. Then, add 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon dried thyme, 1/2 teaspoon paprika, and a pinch of kosher salt and freshly ground black pepper.
    Whisk again until all spices are evenly incorporated, creating a smooth, aromatic glaze.
  • Coat Potatoes in Glaze: Add the dried potatoes to the bowl with the honey mustard mixture.
    Using a spatula or your hands (with gloves if preferred), toss each potato until it is evenly coated in the glaze.
    Ensure that each potato has a thin, uniform layer of honey mustard so that every bite will have a perfect balance of sweetness, tang, and savory flavor.
  • Arrange Potatoes on Baking Sheet: Spread the coated potatoes evenly across the prepared baking sheet in a single layer.
    Make sure they are not overcrowded—this allows hot air to circulate and ensures even browning.
    Drizzle any remaining glaze from the bowl over the potatoes for extra flavor and caramelization during roasting.
  • Roast Potatoes Until Golden: Place the baking sheet in the preheated oven. Roast the potatoes for approximately 30 minutes, turning them once halfway through the cooking time.
    Use a spatula to gently flip them, ensuring that all sides get golden brown and slightly crisp.
    The potatoes are done when they are tender inside and can be easily pierced with a fork, with a caramelized, slightly sticky glaze on the surface.
  • Add Fresh Herbs and Seasoning: Once the potatoes are perfectly roasted, remove them from the oven.
    Immediately sprinkle 1 tablespoon of freshly chopped chives over the top for a burst of color and fresh flavor.
    Taste and adjust seasoning with additional kosher salt and black pepper if needed.
