Combine the Dry Ingredients: In a medium mixing bowl, whisk together 1¾ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt, and ½ teaspoon ground cinnamon until well blended. Whisking helps to evenly distribute the baking soda and cinnamon throughout the flour, preventing clumps and ensuring the bread bakes uniformly. Set this bowl aside. Cream Butter and Sugar to Perfection: In a large mixing bowl (or the bowl of a stand mixer fitted with the paddle attachment), add ¾ cup light or dark brown sugar and ½ cup softened unsalted butter. Beat the mixture on medium-high speed for about 3 minutes, or until it becomes light, fluffy, and pale in color.
