Ingredients
  

  • 8 ounces fettuccine pasta
  • 2 tablespoons salted butter
  • 1 cup heavy cream
  • ½ teaspoon kosher salt
  • A pinch about ⅛ teaspoon freshly ground black pepper
  • ½ cup freshly grated Parmesan cheese plus extra for garnish
  • Fresh parsley optional, for garnish

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil.
    Add the fettuccine pasta and cook according to the package directions until al dente, usually about 8 to 10 minutes. Stir occasionally to prevent sticking.
    Once cooked, carefully drain the pasta, reserving about half a cup of the pasta cooking water for later use.
  • Prepare the Alfredo Sauce Base: While the pasta cooks, melt the butter in a large saucepan over medium heat.
    Once the butter has fully melted, pour in the heavy cream. Stir gently to combine, then season the mixture with salt and freshly ground black pepper.
  • Thicken the Sauce: Allow the butter and cream mixture to come to a gentle boil, then reduce the heat to low.
    Let it simmer uncovered for about 3 to 5 minutes, stirring occasionally.
    The sauce should thicken slightly, becoming creamy enough to coat the back of a spoon.
  • Add the Parmesan Cheese: Remove the saucepan from heat and slowly stir in the grated Parmesan cheese.
    Mix until the cheese has completely melted into the sauce, creating a smooth and velvety texture.
  • Combine Pasta and Sauce: Transfer the drained pasta to a large serving bowl or dish.
    Pour the Alfredo sauce over the noodles and toss gently to coat evenly.
    If the sauce is too thick, add a splash (about ¼ cup) of the reserved pasta water to loosen it to your preferred consistency.
  • Serve and Garnish: Serve the Fettuccine Alfredo immediately while warm.
    Sprinkle with extra Parmesan cheese and fresh parsley if desired, adding a touch of color and flavor.

Notes

  • Pasta Water Magic: The reserved pasta water contains starch that helps thin the sauce while helping it cling to the noodles beautifully. Add it gradually to avoid thinning the sauce too much.
  • Cheese Quality Matters: Freshly grated Parmesan melts better and gives a richer flavor compared to pre-grated varieties.
  • Adjusting Thickness: Simmer the sauce longer if you prefer a thicker consistency or add more cream for a richer sauce.
  • Butter Alternatives: Salted butter adds flavor, but unsalted butter can be used if you want more control over the salt level.
